Wild Mountain Cumin - 1.5 ounces
1.5 ounces in a glass jar
Foraged in the Hindu Kush mountains of Afghanistan, these wild cumin seeds are tiny and black with long stems. Botanically distinct from common cumin, this variety is renowned throughout central and south Asia for its delicious flavor and medicinal properties. It has a savory, penetrating aroma and bright, umami flavor evocative of caramelized onions. Burlap & Barrel is a New York-based spice company working towards ending inequality and exploitation in food systems that disenfranchise skilled farmers.
Toast whole seeds in oil to start stir-fries, soups and curries. Add to a rub for meats and vegetables before roasting or grilling.
Meet the Forager: Ali Mohamed collects this wild mountain cumin from foragers who bring it down to Faizabad from the high mountains. Other than the small quantities exported by Burlap & Barrel, it is harvested only for local consumption. There is no scalability or institutional infrastructure for export and access to this rare cumin varietal is due to Burlap & Barrel founder Ethan’s years spent working in Badakhshan and surrounding provinces.
