Thyme, a member of the mint family, has a spicy, clove-like aroma and notes of citrus. It's ubiquitous in French cuisine. Ours is grown by WillowWisp, an organic farm in Damascus, PA. Wrap in a paper towel and keep refrigerated.
Use thyme to flavor seafood, pork and chicken. Toss a spring into a simmering pot of beans. To chop, remove the leaves by pinching your fingers together and running them down the stem the opposite way from the how the leaves grow.
