Tarragon is a mainstay of French cuisine, a tender-leaved herb with a fresh spring flavor and a hint of licorice. Tuck a sprig of tarragon under the skin before you roast your next chicken. Finely chop and add it to mayonnaise or a vinaigrette. Try it on fruit salad.
