Nettle Meadow Farm, in Thurman, NY, is essentially an animal rescue that happens to make award-winning cheeses. Their Simply Sheep is a semi-aged sheep's milk cheese with smooth, buttery undertones beneath its bloomy rind. The flavor ranges from smooth to robust as it ages. Simply Sheep was the Second Place Winner at the 2019 U.S. Cheese Championship and took Third Place at the 2018 World Cheese Championship.
Simply Sheep is quite rich, so can be enjoyed on its own, with a slice of apple or pear, stirred into hot pasta or stuffed into a pitted Medjool date with a piece of toasted walnut.
