Harvested for millennia in the mountains around the ancient Vietnamese city of Huế, this royal cinnamon is an heirloom variety of Saigon cinnamon that is not widely harvested or exported. It exemplifies the deep honeyed sweetness and pronounced spice for which Vietnamese cinnamon is prized. Harvesting technique: Instead of chopping down the tree to harvest the bark, a deep cut is made around the base and the bark dries on the tree for a couple of weeks before harvest. This makes it easier to harvest, but essential oils become concentrated rather than evaporating as the bark dries in the hot sun, wafting a spicy aroma that can be detected from half a mile away.
