Pepitas de calabaza is how squash seeds are referred to in Mexico, where they are a very popular snack. Stony Brook's pepitas are made in the Finger Lakes region of New York with seeds from locally grown heirloom pumpkins. The seeds are brined and roasted in small batches to coax out a toasted flavor and crisp crunch.
Pumpkin seeds contain zinc, copper, lutein, beta carotene and Vitamin E, so they make a delicious, healthy snack. Try sprinkling them on soups, salads, avocado toast and even peanut butter sandwiches.
