Organic Rutabaga - 1 head
Rutabagas are delicious! Mash them as you would potatoes. High in vitamin C, potassium, and fiber.
Cut the potatoes into large chunks and boil them in salted water until just tender. Toss vigorously with olive oil, duck fat or ghee until outsides become shaggy. Season with salt and roast in a 450ºF oven for about an hour, turning once midway.
