Nimbus Triple Cream - 8 ounces
This triple cream cheese with a bloomy rind is made with grass-fed cow's milk in the French tradition by Chaseholm Farm Creamery in Pine Plains, NY. It's cave aged for 6-8 weeks, yielding a devastatingly rich, dense softness with earthy undertones. (For the uninitiated, a triple cream contains three parts butterfat to every one part protein.)
Enjoy it at room temperature alongside juicy pears or apples and some buttery spiced pecans.
