This fresh, locally stone-ground all-purpose flour from Farmer Ground Flour in New York is a blend of organic hard red wheat and soft white winter wheat. Unlike with conventional white flour, the nutritional wheat germ is retained, giving this a protein content of approximately 11%. The large bran flakes are removed, leaving only the tiny bran flakes for a finer texture and creamy color.
