Sweet pimentón peppers, grown by a single-family-owned fábrica in the Extremadura region of western Spain, are slowly dried over oak fires. Sprinkle over popcorn or roasted nuts. Mix with salt, ground cumin and coriander for a meat seasoning or dry rub. Stir into mayonnaise as a dip for shrimp.
