Sappy Ewe - ~8 ounces
A great example of Adirondacks terroir, Sappy Ewe is a sheep and cow milk blend infused with cream and a maple reduction and caved aged just a touch longer than most of Nettle Mettle's bloomy rinds. It's finished in an envelope of black ash. This cheese has medaled at the U.S. Cheese Championships twice, the World Cheese Championships, and the ACS Contest.
